The Shai will age nicely for the next 10 years

Begins as a sourced Irish whiskey with a mash bill of 93 percent corn imported from France and 7 percent malted barley that is further aged at the distillery and finished in used port barrels from Portugal

This wine cries out for grilled rack of lamb but is also well suited to accompany chicken with balsamic marinade

Michel and Thérèse practise sustainable viticulture throughout their vineyard & use biodynamics in particular on the plot where they grow white grapes
